With Cinco de Mayo approaching, this was the ideal recipe to share. Southwestern cuisine blends authentic Mexican flavors with a touch of American influence, and this dressing captures that balance—bright, slightly tangy, and warmly spiced.

Growing up in Arizona, Mexican and Southwestern foods have always been a part of my life, so I enjoy riffing on those flavors in the kitchen. Lately our family has been making burritos and burrito bowls regularly. While the components are tasty on their own, a bold, spicy sauce pulls everything together. That’s how this dressing was born.

The dressing is thick but drizzleable, slightly tangy from vinegar and lime, and seasoned with chili powder, cumin, oregano, and paprika. It’s quick to make and elevates simple meals—especially burritos and bowls—by tying the ingredients together.

For a burrito bowl I like to arrange separate portions of garlicky rice, creamy pinto beans, sautéed peppers and onions, and crisp butter lettuce so everyone can serve themselves. When everything’s ready I finish the bowl with a generous drizzle of this dressing.

For burritos I use homemade spelt tortillas spread with guacamole, a spoonful of charro beans, fresh salsa, and then roll them up and drizzle the dressing on top. You can add cheese if you like; the dressing plays well with dairy or dairy-free options.

This sauce isn’t limited to burritos. It works beautifully with any chili-forward dish: tacos, quesadillas, grilled meats, roasted vegetables, and green salads. Keep a jar handy—it’ll brighten many weeknight meals.

Recipe notes

If you prefer a thinner sauce, stir in a little water a teaspoon at a time until you reach the desired consistency. I don’t recommend using thick Greek yogurt for this recipe, as it can make the dressing too heavy.

Salsa fresca (fresh salsa) is a family favorite and a perfect companion. I chop grape or cherry tomatoes, add minced red onion, garlic, cilantro, lime juice, and sea salt. I adjust quantities as I go; it’s bright, simple, and irresistible on its own.

My guacamole is intentionally simple: mashed avocado, lime juice, and sea salt. Season to taste and enjoy—often I end up licking the bowl before assembling the burritos.

Instant Pot Charro Beans are a staple with our Mexican-style meals and pair perfectly with this dressing. Tex-Mex rice is another great base if you’re making burrito bowls.

Ingredients

  • 3 Tablespoons plain yogurt (low-fat or dairy-free)
  • 2 Tablespoons mayo (Vegenaise works well)
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon lime juice
  • 1 clove garlic minced
  • 1 ½ teaspoons chili powder
  • ¾ teaspoon cumin
  • teaspoon oregano
  • teaspoon paprika
  • good dash sea salt
  • dash cayenne to taste

Instructions

  • Combine all ingredients in a bowl and mix until smooth and well blended.
  • You can use it right away, but chilling for a short time will deepen the flavors.
