About the Technique

This dish relies on two simple technique points to deliver the best result:

Ingredients

  • 1 bunch asparagus spears, tough stems trimmed
  • 2 Tbsp olive oil
  • ¼ tsp plus 1 pinch table salt, divided
  • ¼ tsp plus 1 pinch black pepper, divided
  • ¼ cup loosely packed fresh parsley leaves
  • ¼ cup loosely packed fresh mint leaves
  • 1 medium clove garlic
  • Zest of 1 lemon, plus lemon wedges for serving

Instructions

  1. Preheat the oven to 450°F and position a rack in the lower third of the oven. Line a sheet tray with parchment paper for easy cleanup.
  2. Arrange the asparagus in a single layer on the prepared tray. Drizzle with the olive oil, then season with ¼ teaspoon each salt and pepper. Toss gently so the spears are evenly coated and spread them out so they roast, not steam.
  3. Roast until the asparagus is tender with a bit of browning at the tips and along the sides: 5–7 minutes for thin spears, about 10 minutes for thicker ones. Test with a fork — the stalks should still have a slight resistance.
