Meatball subs were one of my favorite comfort foods before I went grain-free. This recipe recreates that classic taste in a paleo-friendly way. It’s a go-to meal for me and can be assembled quickly if you have the meatballs or bread prepared ahead of time.

The flatbread pictured is a fast, easy, grain-free garlic bread made with flax meal (or coconut flour as an alternative). I usually bake the bread while I make the meatballs and sauce so the bread finishes first.

Paleo Meatball Sub

Ingredients

  • MEATBALLS:
  • ½ lb Ground beef or ground turkey
  • 1 Egg
  • 1 teaspoon Italian seasonings
  • 1 teaspoon garlic powder
  • ½ tablespoon oil of choice (olive oil, coconut oil, etc.)
  • ½ tablespoon coconut flour or flax meal
  • SAUCE:
  • 1 8-ounce can organic tomato puree or sauce
  • 1 clove garlic, peeled and minced
  • 2 teaspoons Italian seasonings
  • 1 teaspoon garlic powder
  • 1 tablespoon minced onion (optional)
  • 1 tablespoon sliced or chopped green or black olives (optional)
  • 1 tablespoon chopped mushrooms (optional)
  • 2 slices paleo bread (recipe link below for the garlic flatbread shown)

Instructions

  1. In a large bowl, combine all meatball ingredients except the ½ tablespoon of oil. Mix until evenly combined.
  2. Form the mixture into small, evenly sized meatballs.
  3. Heat a frying pan over medium heat and add the oil.
  4. Add the meatballs and brown them on all sides. Cover the pan and cook on medium for about 7 minutes to ensure they cook through.
  5. While the meatballs cook, warm a saucepan over medium heat and add all sauce ingredients. Bring to a gentle boil.
  6. Add the browned meatballs to the boiling sauce.
  7. Reduce heat to low, cover, and simmer for 10 minutes so the flavors meld.
  8. Place meatballs and sauce on the paleo bread. Top with cheese if desired.
  9. Serve warm.
