Here’s what we’ll be enjoying this week:

Meatless Monday: Four Cheese and Spinach Stuffed Shells. This comforting, cheesy bake is one of my favorite meatless meals and a perfect way to start the week.

I reserve Monday for a meatless dinner because it’s easier on the budget and lighter on the environment. My husband, who usually prefers meat and potatoes, doesn’t protest—especially when I make a special dessert to go with the meal.

Tuesday: Easy Sloppy Joes. A simple family classic that’s quick to make and always well received. It’s a satisfying, no-fuss weeknight dinner.

Wednesday: Chicken with Roasted Lemons and Green Olives. With warmer weather on the way, this bright, savory dish is just right. The combination of roasted lemon and olives creates an irresistible flavor that pairs beautifully with roasted vegetables or rice.

Thursday: Porcupine Meatballs. A longtime comfort food favorite, especially delicious served alongside a big baked potato and a green salad.

Friday: Barbecue Chicken Pizza Skillet Lasagna. Think of pizza flavors in a skillet—cheesy, melty, and full of barbecue chicken goodness. This one disappears fast at our house.
