Why this recipe works
Corn fritters make a versatile snack, starter or side. They have a pleasant sweet corn flavour and a satisfying crunch. With simple seasonings and basic veg, they’re bright, tasty and crowd-pleasing. This version skips eggs and uses plant milk, so it’s easy to make vegan while still delivering great texture and flavour.
Ingredients to make Sweetcorn Fritters

- Oil – Vegetable or olive oil works well for frying.
- Flour – Forms the batter; gluten-free plain flour is a good option if needed.
- Baking powder – Helps the fritters rise and become crisp.
- Salt & pepper – Season to taste.
- Milk – Any milk of choice to loosen the batter; soy milk is a great vegan option.
- Spring onions – Thinly sliced for a mild onion flavour.
- Red bell pepper – Finely chopped for colour and crunch.
- Frozen corn – Thawed before mixing. Fresh corn kernels cut from the cob also work.
See the recipe card below for exact quantities.
Substitutions
- Flour – Substitute with gram (chickpea) flour or another gluten-free blend for a different texture and extra protein.
- Vegetables – Swap or add zucchini, grated carrot, chopped tomato or spinach depending on what you have on hand.
- Corn – Use fresh corn cut from the cob if you prefer. Frozen corn is convenient and works perfectly.
Variations
- Spicy – Add cayenne, chili powder or red pepper flakes for heat.
- Herby deluxe – Stir in chopped parsley or coriander and finish with a squeeze of lime.
- Kid-friendly – Serve with a drizzle of maple syrup for a sweeter twist popular with children.
How to make Sweetcorn Fritters

Step 1: Prepare the vegetables: thinly slice the spring onions and finely chop the red bell pepper.

Step 2: In a bowl combine flour and baking powder. Add the milk and season with salt and pepper. Stir until a smooth batter forms.

Step 3: Fold in the chopped vegetables and thawed corn until evenly distributed.

Step 4: Heat about 2 inches of oil in a skillet until hot. Drop 1/4 to 1/3 cup portions of batter into the oil and gently flatten with the back of a spoon. Fry over medium heat for 3–4 minutes per side, until golden and crisp. Drain on paper towels and serve warm.
Hint: For less oil, cook in an air fryer or bake until golden.
Leftovers
Store cooled fritters in an airtight container in the fridge for up to two days. Reheat gently in a pan, air fryer or oven, or enjoy cold.
Recipe FAQs
If the batter is too wet the fritters can turn soggy; add a touch more flour or baking powder to firm it up. Also ensure the oil is hot before adding the batter so they seal and crisp quickly.
They pair well with green salads, potato salad, steamed vegetables or grilled meat. Dips like yogurt, sour cream or a simple chutney also work nicely.
Yes. Corn provides fiber, vitamins and minerals, and adding extra vegetables boosts the nutritional value. Cooking method and ingredient choices (oil type, flour) will affect the final nutrition profile.
