Hummus Deviled Eggs

Ingredients
- 8 eggs
- 1/2 c. hummus prepared or homemade
- 1/4 c. mayonnaise
- 1 tsp. fresh lemon juice
- salt to taste
- cayenne pepper to taste
- toasted sesame seeds for garnish
- garbanzo beans (chick peas) for garnish, optional

Place the eggs in a single layer in a large saucepan and add enough cold water to cover them by about an inch. Bring the water to a rolling boil over high heat. Once boiling, cover the pan, remove it from the heat, and let the eggs sit undisturbed for 12 minutes to cook through.

After 12 minutes, drain the hot water and gently shake the pan to crack the shells. Refill the pan with cold water and add ice cubes to chill the eggs quickly. Let them sit until completely cool, then drain and peel. Pat the peeled eggs dry with paper towels to remove excess moisture.

Slice each egg in half lengthwise and carefully transfer the yolks to a medium bowl. Add the hummus, mayonnaise, and fresh lemon juice to the yolks. Mash everything together with a fork until the mixture is smooth and creamy. Taste and season with salt and a pinch of cayenne pepper, adjusting to your preference.

Spoon or pipe the hummus-infused yolk mixture back into the egg white halves. For a finishing touch, sprinkle toasted sesame seeds over the tops and place a single garbanzo bean on each egg if you like an extra textural garnish. Refrigerate the filled eggs until you are ready to serve; they are best served chilled within a day or two.

Tips: Use a piping bag or a resealable plastic bag with a corner snipped off for neat presentation. If you prefer a thinner filling, add a little more mayonnaise or a splash of olive oil. For a spicier version, increase the cayenne or substitute smoked paprika for a mild, smoky flavor.
