These Garlic Parmesan Air Fryer Boneless Chicken Wings are double-breaded and air fried until golden, crispy and juicy. They are made from sliced boneless, skinless chicken breast dipped in egg, then dredged in a seasoned flour and finely grated parmesan mixture. They cook in the air fryer in about 10–12 minutes and use far less oil than deep-frying. This version does not rely on a sauce or melted butter—the garlic and parmesan are packed into the crunchy breading for full flavor. Serve them as an appetizer, snack, or game-day favorite; they pair well with ranch, buffalo sauce, or any dip you prefer.

For convenience, these wings are great with store-bought ranch or buffalo sauce and classic carrot and celery sticks. If you prefer homemade dips, try a smoky chipotle-style sauce or a creamy Caesar-style dressing. Another tasty option is a honey garlic sauce used on air-fried chicken thighs. Any of these will complement the crunchy garlic-parmesan crust.
The crispiest boneless chicken wings
Three elements create the crispiest boneless wings: double breading, finely grated parmesan, and a light spray of oil.
- Double breading builds a thicker, sturdier crust. After dipping the chicken in egg and flour once, repeat the egg-and-flour steps for a second layer. This produces a deeper golden coating that crisps well in the air fryer.
- Finely grated parmesan blends into the flour so the cheese adheres evenly and helps form a crisp texture. Freshly grating parmesan from a block yields better results than pre-shredded cheese.
- Lightly spraying both sides of the breaded chicken with oil encourages even browning and crisping in the air fryer without soaking the food in fat.
Ingredient notes and substitutions
Below are quick notes on the key ingredients and suggested substitutions. See the recipe card for the full ingredient list and quantities.

- Chicken – Use 2 large boneless, skinless chicken breasts (about 1½ pounds). Cut each breast into 6–7 pieces, depending on the size you prefer for your “wings.”
- Parmesan – Buy a block and finely grate it for best texture and flavor. Grana Padano or Pecorino Romano can be substituted for a slightly different flavor.
- Flour – All-purpose flour works best for the classic breading. You can substitute whole wheat flour or a 1-to-1 gluten-free flour blend if needed.
- Eggs – Two large eggs mixed with a little milk help the coating adhere.
- Garlic – Garlic powder distributes evenly through the flour-parmesan mixture. Fresh minced garlic won’t adhere the same way and has not been tested in this method.
- Seasonings – Garlic powder pairs well with salt, onion powder and paprika. Try smoked paprika or a pinch of cayenne for heat.
- Oil – Use a spray oil for even, light coverage before air frying. Avocado oil or any neutral oil with a high smoke point is suitable.
How to make boneless chicken wings in the air fryer
The process is straightforward despite the double breading. Below is an overview of the steps with supporting images.

Tips for recipe success
- Size consistency: Cut pieces to roughly the same thickness so they cook evenly.
- Grate parmesan finely: Use the smallest grater holes so the cheese blends into the flour and clings to the chicken.
- Use tongs: Keep hands clean and avoid clumping by moving pieces with tongs between bowls.
- Grease the basket: Lightly spray the air fryer basket to prevent sticking.
- Do not overlap: Arrange pieces in a single layer. If your air fryer is small, cook in batches to preserve crispness and even cooking.

Recipe FAQs
Yes. Boneless skinless thighs can be substituted, but they may need a slightly longer air-fry time due to higher fat content and different thickness.
This recipe was developed with flour and parmesan for the double-dredge technique. Breadcrumbs may behave differently in a second dredge; for a breadcrumb method, follow a recipe specifically using breadcrumbs or panko for best results.
Common causes are skipping the double breading, not spraying both sides with oil, or overcrowding the basket so pieces steam instead of crisping. Flip the pieces halfway to crisp both sides evenly.
Reheat leftovers in the air fryer at 350°F (175°C) for 4–6 minutes to restore crispness. Refrigerated breading will soften, so reheating is recommended.

Crispy Garlic Parmesan Air Fryer Boneless Chicken Wings
Ingredients
- 2 large boneless skinless chicken breasts, about 1 ½ pounds
- ½ cup (70 g) all-purpose flour
- ½ cup (40 g) finely grated fresh parmesan cheese
- 1½ teaspoons garlic powder
- 1 teaspoon paprika
- ¾ teaspoon fine sea salt
- ½ teaspoon onion powder
- 2 large eggs
- 2 tablespoons milk
- Spray oil (for the basket and to mist the chicken)
Instructions
- Grease the bottom of the air fryer basket with spray oil.
- Slice each chicken breast into roughly 6–7 pieces, depending on desired size.
- Combine the flour, parmesan, garlic powder, paprika, salt, and onion powder in a shallow bowl and whisk.
- In another shallow bowl, whisk together the eggs and milk.
- Dip a chicken piece into the egg mixture and allow excess to drip off.
- Dredge the piece in the flour-parmesan mixture and shake off excess.
- Dip the piece in the egg mixture a second time.
- Coat it again in the flour mixture to complete the double breading.
- Place the breaded pieces in a single layer in the air fryer basket and repeat with the remaining pieces. Do not overlap.
- Spray the tops lightly with oil.
- Air fry at 400°F (204°C) for 6 minutes. Remove the basket, flip each piece, spray the other side with oil, then air fry for another 4–6 minutes, or until golden and the internal temperature reaches 165°F (74°C).
Notes
- Keep pieces similar in thickness so they finish at the same time.
- Finely grate parmesan using the smallest holes on a box grater for the best texture and adhesion.
- Use tongs to move pieces between bowls to keep hands clean and minimize clumping.
- If your air fryer has limited capacity, cook in batches to avoid overcrowding and to maintain crispness.
