Goodie Girl Birthday Cake Cookies
Goodie Girl’s Birthday Cake Gluten Free Cookies are a flavorful base for these pops. They are vanilla sandwich cookies with a creamy filling studded with sprinkles. In addition to being gluten free, they are peanut free and contain no artificial colors, making them a handy choice for gatherings where dietary needs are a consideration.
These cookies are tasty on their own, but they work especially well crushed and mixed with cream cheese to form the cookie-pop centers. Consider buying an extra box to snack on while you prepare the pops.

Easy to Make
The method is straightforward: pulse the cookies into crumbs, mix with softened cream cheese to bind, form into balls, and insert sticks. Freeze the shaped pops briefly so they hold together, then dip them in melted white chocolate and finish with sprinkles. Allow them to dry on parchment paper.

The finished cookie pops are irresistible. Store them in the refrigerator for a few days or freeze them to keep on hand for cravings.
