Do you lean toward planning or procrastination — or a bit of both? I plan well but often leave things until the last minute. It usually works out, though I’m frequently late and stressed about deadlines. When you procrastinate, any unexpected delay can disrupt your whole plan.
This is me. 100%.
That’s why it’s Friday night and I’m only now posting this week’s menu. I meant to do it earlier, but life happened. My 4-year-old was home and couldn’t sit still long enough for me to think, so we went out and enjoyed the day instead. I figured one late menu won’t starve anyone — and you can always browse my past menus if you need inspiration.

So here I am: a mom who procrastinates, and also a wine-drinking blogger. Now, on to the dinner ideas!

1. Pantry Enchilada Chicken Skillet – This one is a favorite and mostly pantry-friendly; you only need to grab cheese from the fridge. (Personally, I always have several kinds on hand.)
2. Easy Roast Beef and Gravy over Roasted Potatoes – Classic comfort: meat, potatoes, and gravy. Simple, satisfying, and great for weeknights or Sunday dinner.
3. Southwest Chicken Pizza – A homemade copycat of a favorite delivery pizza. Spicy, flavorful, and budget-friendly to make at home.
4. Kale and Quinoa Salad with Salmon – A bright, healthy meal. If salmon isn’t your thing, swap in shrimp or chicken for a similar, delicious result.
5. Pesto Pizza Grilled Cheese – One of my go-to sandwiches that I post about a lot on social media but don’t include on menus often enough. It’s indulgent, easy, and endlessly satisfying.
6. Simple Rice Pilaf with something from the grill – This rice pairs well with almost any protein: sausages, chicken, fish, or steak. Add asparagus or green beans on the side for a complete meal.
7. Tuna Melt Tostadas – In honor of this week’s Tuna Melt roundup, I had to include these fun, crunchy tostadas that make a classic sandwich feel new again.
