Add a bright, flavorful vegetable side to your meal rotation with this Lemon Garlic Roasted Green Beans with Almonds recipe. Easy to make and full of zing, it elevates simple green beans into a crowd-pleasing side.
Keep the nutrients
Roasting in the oven is a healthy method for cooking vegetables: it preserves color and texture and prevents vitamins from leaching out the way they can when boiled.

Trimming the beans
Trim the stem ends of the green beans by lining them up and slicing off just the tougher stem portion. Leave the tapered, tender tips intact — they roast nicely and are pleasant to eat.
How to make garlic green beans
In a large mixing bowl combine olive oil, minced garlic, sliced almonds, the juice and zest of one lemon, and the trimmed green beans. Toss until the beans are evenly coated. Spread the beans in a single layer on a large rimmed baking sheet lined with foil, parchment, or a silicone mat for easy cleanup, and arrange thin lemon slices over the beans.

How long does it take to cook fresh green beans?
Set the oven rack in the middle position and preheat the oven to 400°F (about 200°C). Roast the green beans until they begin to brown and crisp at the edges, stirring occasionally so they cook evenly. Depending on your oven and how brown you like them, this will take roughly 15 to 25 minutes. Remove from the oven, season with sea salt and freshly ground black pepper to taste, and serve warm.
Enjoy!
