In a large mixing bowl combine olive oil, minced garlic, sliced almonds, the juice and zest of one lemon, and the trimmed green beans. Toss until the beans are evenly coated. Spread the beans in a single layer on a large rimmed baking sheet lined with foil, parchment, or a silicone mat for easy cleanup, and arrange thin lemon slices over the beans.

How long does it take to cook fresh green beans?

Set the oven rack in the middle position and preheat the oven to 400°F (about 200°C). Roast the green beans until they begin to brown and crisp at the edges, stirring occasionally so they cook evenly. Depending on your oven and how brown you like them, this will take roughly 15 to 25 minutes. Remove from the oven, season with sea salt and freshly ground black pepper to taste, and serve warm.

Ingredients

  • 1 pound green beans trimmed
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • ½ cup sliced almonds
  • 1 lemon thinly sliced
  • juice and zest of one lemon
  • sea salt and freshly ground black pepper to taste

Instructions

  • Preheat the oven to 400°F and move the rack to the middle position. Line a large rimmed baking sheet with foil or parchment for easier cleanup.
