On a chilly, rainy day my son and I decided to bake Mint Chocolate Pixies. These chocolate-mint cookies were quick to prepare, fun to make together, and filled the house with a wonderful aroma. My son loved helping, and my daughter declared them her new favorite cookie. The finished cookies are moist, minty, and rich with chocolate.

Ingredients:

  • 4 (1-oz) squares unsweetened chocolate
  • ¼ cup unsalted butter
  • 4 large eggs
  • 2 cups granulated sugar
  • 2 tsp vanilla extract
  • 2 tsp peppermint extract
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ¼ cup powdered sugar (for rolling)

How to Make Mint Chocolate Pixies

Melt the butter and unsweetened chocolate together in a large glass bowl—microwave in short intervals, stirring between each, until smooth.

Beat in the eggs one at a time using a hand mixer on medium speed, then gradually add the granulated sugar, vanilla, and peppermint extracts until well combined.

In a separate bowl, whisk together the flour, baking powder, and salt.

At low speed, slowly incorporate the dry ingredients into the chocolate mixture until just blended. Cover the dough and chill in the refrigerator for 2 hours to firm up.

Preheat the oven to 300°F (150°C). Scoop spoonfuls of dough and roll them into small balls. Roll each ball in powdered sugar to coat, then place the cookies on a Silpat- or parchment-lined baking sheet, spacing them evenly.

Bake for 16–18 minutes. The centers should remain soft but set around the edges. Remove the baking sheet from the oven and transfer cookies to a wire cooling rack to cool completely.
