Oven-Baked Sausage and Potatoes with Roasted Herbs

Welcome to my blog. I’ve been holding onto this baked sausage and potatoes recipe for two years and finally put measurements to it. It’s simple, comforting, and perfect any time of day.

How did this recipe come about?

I developed this recipe the night after moving into a new apartment. With most of my groceries gone and stores closed late at night, I had to improvise with what was left in my fridge and freezer.

I had a few potatoes, some bell peppers and onions that were on their last days, and a package of sweet Italian sausage in the freezer. It felt like the perfect combination, so I quickly prepped the ingredients, seasoned everything, and baked it.

The aroma told me I’d made the right choice. It was satisfying to create a filling, flavorful meal from a few simple ingredients when I really needed something to eat.

A delicious all-in-one dish that’s simple, quick, and easy to make.


Ingredients

  • 2 lbs ground sweet Italian sausage
  • 2 lbs russet potatoes
  • 1 cup onions, coarsely chopped
  • 1 cup green bell pepper, coarsely chopped
  • 1 cup red bell pepper, coarsely chopped
  • 1/4 cup water
  • 1 tbsp olive oil
  • 2 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp Italian seasoning
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Peel the potatoes, then slice and dice them into even-sized cubes so they cook uniformly.
  2. Slice and chop the onions and bell peppers into bite-sized pieces.
  3. Preheat the oven to 375°F (190°C).
  4. Remove the sausage from its casing if necessary and shape or break it into rectangular pieces or bite-sized chunks.
  5. Place the potatoes, sausage, onions, and peppers in a casserole dish.
  6. Sprinkle the seasonings over the ingredients and toss gently to combine.
  7. Drizzle the olive oil and add the water to the dish to help steam the potatoes during the first stage of baking.
  8. Cover the dish with aluminum foil and bake for about 1 hour, until the potatoes are tender.
  9. Remove the foil and bake uncovered for an additional 15–20 minutes, or until the sausage is browned and the potatoes have crispy edges.
