Chop the bacon crosswise into small strips.

Chop the onion.

In a large Dutch oven over medium heat, sauté bacon until browned but not overly crispy. Pour off all but 1 tablespoon of bacon fat.

Add the onions and cook until translucent.

Drain two cans of the French-cut green beans and add the beans (not the liquid) to the pot. Add both the beans and the juice from the remaining can.

Stir in the butter, salt, and pepper.

Reduce heat to a simmer and cook, uncovered, for 30 minutes.

Hold on low up to 1 hour; add ¼ cup of water if needed to replace evaporation.
