I wanted to capture that brownie experience in a grab-and-go cookie. The challenge was to make them gluten-free, dairy-free and egg-free — and I also aimed for nut-free. The result exceeded my expectations.

Ingredients
  • 1 cup, plus 3 tablespoons Sarah’s gluten free flour blend
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1/3 cup dairy-free chocolate chips, melted
  • 1/4 cup grape seed or sunflower oil
  • 1/2 cup quality cocoa powder
  • 3/4 cup cane sugar
  • 1/4 cup pure maple syrup
  • 1/4 cup warm water
  • 1 teaspoon pure vanilla extract
Instructions
  1. Preheat the oven to 350°F (175°C). Line a large baking sheet with parchment paper.
  2. In a medium bowl, sift together the gluten-free flour blend, baking powder and salt. Set aside.
  3. Melt the dairy-free chocolate chips. In a large mixing bowl, combine the melted chocolate with the oil and cocoa powder, stirring until smooth.
  4. Stir the sugar, maple syrup, warm water and vanilla into the chocolate mixture. Add the flour mixture and mix until a cohesive dough forms.
  5. Use a cookie scoop or your hands to portion the dough onto the prepared baking sheet. Flatten each portion slightly with your fingers.
  6. Bake the cookies for 11–12 minutes, then cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
