Preparing a few components the night before can make a big difference during a rushed morning.

I developed a simple, nutrient-dense breakfast bowl that’s high in protein, full of vegetables, and loved by both kids and adults. If you cook the quinoa in advance and portion it for several days, assembling this bowl takes under 10 minutes—fast, nourishing, and satisfying.

Ingredients

Instructions

Heat a large pan over medium heat and add 1/2 tsp olive oil.

Prepare ingredients: halve the cherry tomatoes, wash the spinach, and set the egg aside.

Add spinach and tomatoes to the pan, arranging them evenly.

Cook for about 2 minutes until the spinach begins to wilt.

Season with salt and pepper to taste and gently stir the tomatoes with the spinach.

Add the egg and cook to your preferred doneness. For over-medium, flip the egg halfway; alternatively, scramble if you prefer.

Reheat the quinoa if needed and line a bowl with the quinoa. Top with the cooked spinach, tomatoes, and the egg.
