Inspired by Chipotle’s honey chipotle flavor, this homemade version highlights chipotles in adobo—one of my favorite pantry ingredients. The sauce balances smoky, spicy peppers with honey for a pleasant sweetness that keeps the chicken bright and flavorful.

Made with boneless, skinless chicken thighs, this recipe stays juicy and forgiving in the pan. The thighs are delicious on their own, or sliced for tacos, burrito bowls, salads, and sandwiches.

This is a straightforward recipe that comes together easily:

  • Trim excess fat (optional) – Clip any large pieces of fat if you prefer, then place the thighs in a large bowl.
  • Make the marinade – Blend olive oil, chipotles in adobo, lime juice, honey, taco seasoning, ancho chile powder, and kosher salt until smooth. An immersion blender, food processor, or regular blender all work.

Ingredients

  

  • 2 pounds boneless, skinless chicken thighs
  • cup olive oil
  • 3 chipotles in adobo
  • tablespoons lime juice
  • 3 tablespoons honey
  • 2 teaspoons Siete taco seasoning, mild or favorite brand
  • 1 teaspoon ancho chile powder
  • 1 teaspoon kosher salt

Instructions

 

  • Trim any excess fat from the chicken thighs if needed, then transfer them to a large bowl.
  • Blend the olive oil, chipotles, lime juice, honey, taco seasoning, ancho chile powder, and kosher salt until the marinade is smooth and thick.
  • Pour the marinade over the chicken and use clean hands to coat each piece evenly. Cover and refrigerate overnight or for at least 4 hours.
  • Heat a large nonstick skillet over medium heat with a generous drizzle of olive oil to coat the bottom.
  • Cook the thighs 4–6 minutes per side until they caramelize and reach an internal temperature of 165°F (74°C). Cook in batches to avoid crowding the pan.
  • Transfer to a cutting board and let rest briefly. Serve whole or sliced for tacos and bowls.
