Ingredients
For the pizza dough
- 2.25 cups (300g) wholewheat flour
- 5 oz lukewarm water (plus additional as needed)
- 1 tsp salt
- 1 tsp caster sugar
- 1.5 tsp dried yeast
- 1 oz olive oil
For the palak paneer
- 300g fresh spinach (stems removed)
- 100g soft cheese or paneer (such as laughing cow or paneer cubes)
- 1 red onion, peeled and sliced
- 1 garlic clove, finely chopped
- 2 ripe tomatoes, diced (or 150g tomato sauce)
- 1 tsp garam masala
- 1 tsp paprika
- 1 tsp turmeric
- 1 inch fresh ginger, peeled and grated
- 1 fresh chili, finely chopped (optional)
- Olive oil
- Salt and pepper to taste
Instructions
To prepare the pizza crust
- Make the leaven: mix 1/4 cup flour, the yeast, the sugar and 2 oz lukewarm water in a small bowl. Let rest 10–15 minutes until bubbly.
- In a mixing bowl combine the remaining flour and salt.
- Add the leaven and mix slowly to incorporate.
- Add the olive oil and continue mixing.
- Gradually add the remaining water in small amounts and mix for about 10 minutes until the dough is smooth and elastic.
- If needed, adjust with small amounts of water or flour to reach the right consistency.
- Cover the bowl and let the dough rise in a warm place for at least one hour, until doubled in size.
- Preheat the oven to its highest temperature (the example oven reaches 570°F / 300°C).
- Turn the dough onto an oiled sheet of baking paper or a silpat and roll it out with a rolling pin.
To prepare the palak paneer
- Heat a drizzle of olive oil in a casserole over medium heat.
- Add the sliced onion with a pinch of salt and cook for 2 minutes until softened.
- Add paprika, turmeric, garam masala, grated ginger, pepper and garlic; cook for about 4 minutes to release the spices’ aromas.
- Add the spinach in batches, waiting for each addition to wilt slightly before adding more.
- Stir in the cheese or paneer and cook for 2 minutes.
- Add the chopped chili and tomatoes (or tomato sauce), cover and simmer on low for about 15 minutes. Season with salt and pepper to taste.
To assemble
- Spread the palak paneer evenly over the rolled pizza dough.
- Bake on the oven’s maximum heat for 5–10 minutes, or until the crust is golden and the topping is hot.
