Four tasty versions: smoked salmon with cucumber and sesame; arugula with lemon and sea salt; soft-boiled egg with tomatoes, chili, and lime; and radishes with honey and cracked black pepper.

Servings: 4 toasts

Ingredients 

Avocado Toast With Smoked Salmon, Cucumber, Soy Sauce, and Sesame Seeds.

  • 1 slice of whole grain bread, toasted
  • 1/2 of an avocado, sliced or mashed
  • 2 oz smoked salmon
  • Cucumber slices
  • 1 tsp low sodium soy sauce
  • Sesame seeds, for garnish

Avocado Toast With Arugula, Sea Salt, and Lemon.

  • 1 slice of whole grain bread, toasted
  • 1/2 of an avocado, sliced or mashed
  • Pinch of sea (or kosher) salt
  • 1 handful of arugula
  • Spritz of fresh lemon juice

Avocado Toast With Soft-Boiled Egg, Tomatoes, Chili, and Lime.

  • 1 slice of whole grain bread, toasted
  • 1/2 of an avocado, sliced or mashed
  • 1 soft-boiled egg (poached or fried works too)
  • A few cherry tomatoes, sliced in half or quartered
  • A pinch of chili powder
  • A pinch of chili flakes
  • Spritz of fresh lime juice

  • 1 slice of whole grain bread, toasted
  • 1/2 of an avocado, sliced or mashed
  • A few very thin radish slices, enough to cover the toast
  • 1 TBSP raw liquid honey
  • A few cracks of black pepper

Instructions 

Avocado Toast With Smoked Salmon, Cucumber, Soy Sauce, and Sesame Seeds.

  • Toast the bread to your liking. Spread or layer the avocado, add cucumber slices and smoked salmon, drizzle a little soy sauce, and finish with sesame seeds.

Avocado Toast With Arugula, Sea Salt, and Lemon.

  • Toast the bread, spread avocado, season with a pinch of sea salt, top with a handful of arugula, and finish with a spritz of fresh lemon juice.

Avocado Toast With Soft-Boiled Egg, Tomatoes, Chili, and Lime.

  • To make a soft-boiled egg: place the egg in a small saucepan and add enough water to cover it. Bring the water to a gentle simmer, then cook 4–5 minutes for a soft yolk. Drain and cool under running water, then peel and slice the egg.

    Toast the bread, spread avocado, add tomatoes and egg slices, sprinkle chili powder and flakes to taste, and finish with a spritz of lime juice.

Avocado Toast With Radishes, Honey, and Cracked Black Pepper.

  • Toast the bread, layer avocado and very thin radish slices in your preferred order, drizzle with raw honey, and finish with cracked black pepper.
