Ingredients
For pop tarts:
- 1 box refrigerated pie crust (2 crusts)
- ⅓ cup berry jam
- 1 large egg
For icing:
- 1½ cups powdered sugar
- 1–2 tablespoons milk, as needed
- 1 teaspoon pure vanilla extract
- 1 drop pink food coloring (optional)
- 2 tablespoons sprinkles
Instructions
For the Pop Tarts
- Preheat the air fryer to 375°F (190°C) for 5 minutes.
- Unroll pie crusts on a lightly floured surface and cut 2×3-inch rectangles. You should get about 6 per crust.
- Gather scraps, re-roll to 1/8-inch thickness, and cut additional rectangles.
- Place 2 teaspoons of jam in the center of one rectangle, top with a second rectangle, and pinch edges to seal.
- Poke the top with a fork to vent, then crimp the edges with a fork to ensure a tight seal.
- Repeat with remaining rectangles. Beat the egg with a splash of water and brush the tops of the pop tarts with the egg wash.
- Place a few pop tarts in the air fryer without overcrowding. You may need multiple batches.
- Cook at 375°F for 8–10 minutes, until golden brown and crisp.
- Transfer to a wire rack and cool completely before frosting.
For the Frosting
- Whisk together powdered sugar, 1 tablespoon milk, vanilla, and food coloring in a small bowl.
- If the glaze is too thick, add the second tablespoon of milk a little at a time.
- Spread the frosting over cooled pop tarts and immediately top with sprinkles.
- Allow the frosting to set for about 10 minutes before serving.
