Equipment

Ingredients 

  • 2 lbs chicken thighs (or breasts) sliced thin

For the chicken marinade

  • 1 tsp sesame oil
  • 1 tbsp minced garlic
  • 2 tbsps minced ginger
  • 1/4 cup teriyaki sauce
  • 1/4 cup sweet chili sauce
  • 2 tbsps light brown sugar

For the Sauce

  • 1/2 cup sweet chili sauce
  • 1/4 cup teriyaki sauce
  • 1 tbsp dark soy sauce
  • 2 tbsps light brown sugar
  • 1 tbsp honey

Instructions 

  1. Slice the chicken thinly. Combine the marinade ingredients (sesame oil, garlic, ginger, teriyaki, sweet chili and brown sugar) and marinate the chicken for at least one hour or up to overnight for more flavor.
  2. Thread the marinated chicken pieces onto skewers, leaving a little space between pieces so heat circulates evenly.
  3. Preheat the oven to 350°F (175°C). Arrange the skewers on a baking sheet and bake for 15 minutes. While they cook, prepare the sauce by combining the sauce ingredients (sweet chili, teriyaki, dark soy, brown sugar and honey) in a small saucepan and simmering gently until slightly thickened.
  4. Brush the skewers with the sauce, return to the oven and cook for another 10 minutes. For a glossy finish and slight caramelization, brush again and broil for 1–2 minutes, watching carefully to avoid burning.
  5. Brush with any remaining sauce and serve the skewers hot. They pair well with rice, vegetables, or your favorite sides.
