Chocolate Covered Strawberries: Simple Homemade Recipe & Tips

Chocolate-covered strawberries are a classic, elegant dessert and make a lovely gift for someone special. Store-bought versions can be expensive, but they’re simple to make at home and look beautiful when prepared correctly. Here I’ll walk you through an easy method that produces smooth, glossy chocolate and attractive results every time.

The most important technique is using a double boiler. You don’t need any special equipment—just a pot of simmering water and a heatproof bowl that fits snugly on top. Bring the water to a boil, set the bowl over the pot, then reduce the heat so the water simmers gently. Place the chocolate in the bowl and let the steam heat melt it slowly. This gentle heat keeps the chocolate silky and prevents burning or seizing.

Choose your chocolate carefully for the best texture. Dark chocolate tends to melt more smoothly because it contains less milk and more cocoa solids. Milk chocolate will also work and gives a creamier, sweeter flavor. If the coating isn’t perfectly smooth, a coating of crushed nuts can both add flavor and hide minor imperfections.

For the crunchy topping, use whatever nuts you have on hand—pecans, walnuts, almonds, or a mix. Crush them finely using a mortar and pestle, a rolling pin inside a sealed bag, or a food processor. Any of these methods will give you evenly sized pieces that adhere nicely to the chocolate.

After dipping each strawberry, place it on parchment paper set on a baking sheet so the chocolate won’t stick. If you want the chocolate to set quickly and achieve a firm finish, place the tray in the freezer for about 15 minutes. Once the chocolate is firm, transfer the strawberries to the refrigerator for storage. They keep best chilled and are ideal to prepare a few hours in advance of serving.

  • Whole strawberries, washed and thoroughly dried
  • Chocolate chips or chopped chocolate (dark or milk)
  • Crushed nuts: pecans, walnuts, almonds, or a mix
  • Toothpicks (optional, for easier dipping)
  • Parchment paper for lining the baking sheet

Instructions

  1. Bring a pot of water to a gentle boil. Set a heatproof bowl over the pot and reduce the heat so the water simmers. The steam should warm the bowl without touching the water.
  2. Pat the strawberries completely dry with paper towels. Any moisture will prevent the chocolate from sticking properly, so make sure they are dry.
  3. Place the chocolate chips or chopped chocolate in the bowl and stir occasionally as it melts. Allow the chocolate to melt slowly until smooth; dark chocolate usually melts with a sleeker texture.
  4. Hold each strawberry by the stem or use a toothpick to dip it into the melted chocolate. Turn the berry to coat it evenly, then scrape off excess chocolate against the side of the bowl.
  5. Immediately roll or sprinkle the coated strawberry in the crushed nuts, then set it on parchment-lined baking sheet. When all strawberries are dipped, put the tray in the freezer for about 15 minutes, or until the chocolate is firm.
  6. Store finished strawberries in the refrigerator until serving. Enjoy fresh for the best flavor and texture.
