Weight Watchers-Friendly Crustless Quiche — 1 SmartPoint Freestyle

Easy Weight Watchers breakfasts are common, but they can sometimes be bland. This Weight Watchers Quiche delivers plenty of flavor (add a pinch of cayenne if you like heat) and is filling too. At only 1 SmartPoint per serving in some plans, it’s an easy, low-point option that you can enjoy without guilt.

Weight Watchers Quiche Recipe

Weight Watchers is more of a lifestyle than a restrictive diet, letting you choose the foods you enjoy while staying mindful of points. Allowing occasional treats helps many people stay consistent long term. One of the perks is that most fruits and vegetables count as zero points, so you can fill up on nutritious ingredients without cutting into your daily points allowance.

Ingredients:

4 egg whites
3 whole eggs
2/3 cup asparagus, cut into 1-inch pieces
5 cherry tomatoes, quartered
1/3 cup diced green bell pepper
1/2 cup shredded parmesan cheese
Salt and pepper to taste

Directions:

1. Preheat your oven to 350°F (175°C). Lightly spray a pie dish with nonstick cooking spray.

2. In a large bowl, whisk the 3 whole eggs and 4 egg whites together until the mixture is smooth and fully combined.

3. Chop the asparagus into 1-inch pieces, quarter the cherry tomatoes, and dice the green bell pepper. Stir these vegetables into the egg mixture.

4. Fold in about half of the shredded parmesan so it disperses through the eggs, then season with salt and pepper to taste. If you like a little heat, add a pinch of cayenne.

5. Pour the mixture into the prepared pie dish, then sprinkle the remaining parmesan evenly over the top.

6. Bake at 350°F for 35–40 minutes, or until the center is set and the top is lightly golden. Let the quiche rest for a few minutes before slicing.
