This recipe comes from my brother-in-law and has become a beloved signature in our family. My daughter coined the name “Uncle G’s” when she asked me to make them for breakfast one morning.

I didn’t even own a waffle iron before this recipe convinced me I needed one. It was worth the purchase. These waffles freeze beautifully: separate each waffle with a piece of parchment, place them in a freezer bag, and toast a frozen waffle for a quick, satisfying weekday breakfast.

Prepare the ingredients and equipment first. Melt the butter and let it cool. In a small bowl, whisk together the sifted flour, baking powder, salt, and sugar. Set the dry mix aside.

In a large bowl, beat the egg yolks with a hand mixer at medium-high speed for about 1 minute. Add the milk and the dry ingredients, then mix at medium speed until well combined. Stir in the cooled melted butter and mix briefly to incorporate.

In a separate clean bowl, beat the egg whites until they form stiff peaks.

Preheat your waffle iron to the desired temperature.

Gently fold the beaten egg whites into the batter, taking care not to deflate them. Fold until the batter is light and airy.

Spoon the batter onto the preheated waffle iron and cook according to the manufacturer’s instructions until the waffles are golden brown and crisp.

Serve with extra butter and real maple syrup, or top with whipped cream and a dusting of powdered sugar. These waffles are wonderful any way you like them.
