Ingredients

Pavlova

  • 6 egg whites, at room temperature (205g)
  • 1 ½ cups superfine sugar (300g)
  • ½ teaspoon white wine vinegar
  • 1 teaspoon cornstarch
  • 1 teaspoon vanilla

  • 1 ¾ cups whole milk
  • ¼ cup passion fruit puree (about 68g)
  • 1 teaspoon vanilla extract
  • 4 egg yolks (72g)
  • ¼ cup cornstarch (34g)
  • ½ cup sugar (110g)
  • ¼ teaspoon salt

Passion Fruit Agrodolce

  • ½ cup sugar
  • 1 tablespoon honey
  • 2 teaspoons water
  • ½ cup passion fruit puree
  • 1 tablespoon champagne vinegar

Vanilla Whipped Cream

  • 1 cup cold heavy cream
  • 1 tablespoon sugar (adjust to taste)
  • 1 teaspoon vanilla extract

Instructions

Pavlova

  1. Preheat the oven to 350°F (175°C).
  2. Separate the egg whites from the yolks; reserve the yolks for the pastry cream.
  3. Beat the egg whites until soft peaks form, 1–2 minutes.
  4. Gradually add the superfine sugar and continue beating until stiff peaks form.
  5. Add the vanilla and white wine vinegar and beat to combine for about 1 minute.
  6. Sift the cornstarch over the meringue and fold it in gently until fully incorporated, about 10 turns with a spatula.
  7. Pipe or spoon the meringue into 4–5 inch nests on a Silpat or parchment-lined baking sheet.
  8. Reduce the oven temperature to 200°F (95°C) and bake for 60 minutes without opening the door. When baking is complete, turn the oven off and let the pavlovas cool in the oven for 1–2 hours or until dry on the outside.

Passion Fruit Pastry Cream

  1. You can prepare the pastry cream while the pavlovas bake or make it ahead and chill.
  2. Heat the milk in a saucepan over medium heat until warm but not boiling.
  3. In a separate bowl whisk together the cornstarch, sugar, and salt. Add the egg yolks and whisk until smooth.
  4. Whisk about ¼ cup of the warm milk into the egg mixture to temper, then gradually whisk in enough warm milk so the mixture is smooth. Return the mixture to the saucepan over medium heat.
  5. Add the passion fruit puree and whisk constantly for about 5 minutes until the custard thickens to a pudding-like consistency, then remove from heat.
  6. Stir in the vanilla extract and strain the custard through a fine sieve into a bowl. Press plastic wrap directly onto the surface to prevent a skin. Cool 30 minutes at room temperature, then chill at least 1 hour.

  1. While the pavlovas cool in the oven, make the agrodolce.
  2. In a medium saucepan combine the sugar, honey, and water and cook over medium heat without stirring. Watch as the sugar dissolves and the color deepens, about 4–5 minutes.
  3. Add the passion fruit puree and vinegar, stir to combine, then reduce the heat to medium-low. Stir frequently and reduce until slightly thicker than maple syrup. Cool before using.

Vanilla Whipped Cream

  1. Mix the cold cream with the sugar and refrigerate five minutes to help the sugar dissolve.
  2. Chill a metal mixing bowl and beaters in the freezer for 4–5 minutes, then pour the cream into the bowl.
  3. Beat on medium speed until the cream begins to thicken, add the vanilla, then continue beating until stiff peaks form. Do not overbeat.

Notes

To minimize cracking on the pavlovas, avoid opening the oven during baking and cooling. Let them cool slowly inside the turned-off oven.

If you live in a humid climate and the pavlovas remain sticky after the resting period, bake at 250°F (120°C) for an additional 20–30 minutes until the exterior dries and crisps.
