This week we speak with Nicole Charles of Heal Me Delicious. Heal Me Delicious is a food and lifestyle brand focused on sharing practical wellness guidance for people following the autoimmune paleo protocol (AIP) and for those navigating chronic illness. Nicole blends nutrition, somatic healing, and cultural flavors to offer approachable, nutrient-dense recipes and lifestyle strategies. Here’s our conversation with Nicole.

Why did you start your business?
Nicole: Food, authenticity, holistic healing, social justice, equity and care are central to who I am. As a Professor of Women and Gender Studies, my teaching and research focus on the intersections of gender, race, and health. As a yoga teacher and reiki practitioner, I teach somatic approaches that support emotional and physical healing. I founded Heal Me Delicious to bring these passions together and to document and share my own mind-body-soul recovery from Graves’ disease through the autoimmune healing process.
My work primarily supports women living with autoimmune conditions who are searching for practical lifestyle changes, powerful mindset shifts, and anti-inflammatory, nutrient-rich recipes that make chronic illness easier to manage. Drawing on the vibrant flavors of the Caribbean where I grew up, I design recipes that follow paleo and the autoimmune paleo protocol. That means dishes that are free from grains, dairy, eggs, legumes, refined sugars, nightshades, nuts and seeds, while remaining flavorful and satisfying. My goal is to empower people to reclaim their version of wellbeing by making healing delicious and accessible.
What’s your mission/purpose statement?
Nicole: To inspire and empower autoimmune warriors to live authentic, healthful, and delicious lives.
What 2 (or 3!) pieces of content are you the proudest of?
Nicole: One of my proudest creations is my paleo AIP sourdough bread. Early in the pandemic I saw so many people celebrating homemade sourdough and wanted to create something similar for those on the autoimmune paleo protocol. I’d already developed AIP versions of Irish soda bread and flatbreads, but I wanted a soft, warm sourdough with depth of flavor and a crisp crust. After many trials I landed on a recipe that feels like the real thing. Hearing messages from people who are thrilled to enjoy bread again has been incredibly moving. To help others succeed, I also created an AIP Sourdough Baking Guide to walk bakers through the entire process.
Another favorite is my Peach Thyme Galette. It’s a summer dessert that comes together with simple, seasonal ingredients and tastes like a classic galette—flaky, fruity, and irresistible—yet it’s naturally gluten-free and AIP-compliant. It’s one of those dishes that surprises people with how indulgent and familiar it tastes despite being free of common allergens.
I also love creating recipes that celebrate Caribbean ingredients from my childhood. My AIP Beef Patties, made with plantain and green banana and filled with savory spiced beef, were a joy to develop and share. Those recipes connect cultural memory with healing dietary practices, and readers tell me how meaningful that blend of flavor and tradition can be when navigating recovery.
Where are you going next? What’s your goal for the next year?
Nicole: A cookbook has long been a dream of mine. Lately readers and followers have been asking if I’m working on one, and I can finally say yes — I’m moving forward with plans to publish a cookbook. The next year will be focused on recipe development, testing, and refining a body of work that captures the spirit of Heal Me Delicious: healing-centered, culturally rooted, and deeply flavorful.
