Korean Pork and KimChi Noodle Stir Fry (Kimchee)
This dish is flavorful, satisfying, and wallet-friendly. It’s a great way to use pantry ingredients: sautéed pork with garlic, spicy fermented kimchi, noodles, and a splash of fish sauce combine for bold umami and heat. If you don’t have kimchi, shredded cabbage or any leafy green like kale or swiss chard works well as a substitute.

Tips on How to Cook Korean Noodles with Kimchi and Pork
If you don’t have kimchi on hand, there are many easy substitutions and additions:
- Use shredded cabbage with a splash of hot sauce to mimic kimchi’s tang and heat.
- Substitute chopped kale, swiss chard, or other leafy greens. Chopped broccoli or cauliflower also work.
- Fresh noodles are fine, or use any cooked pasta—angel hair, spaghetti, or fettuccine will do in a pinch.
- This ramen hack is flexible: the combination of pork and fish sauce brings strong umami and spice, and you can easily add extra vegetables for more color and nutrition.
