Thank you to everyone who joined last month’s Bake Club Challenge and shared photos of stunning Black Forest Cakes and Red Velvet Cakes and Cupcakes. The entries were beautiful and creative — many of your bakes looked like they belonged in a professional bakery. It was a pleasure to see so many interpretations and personal touches.

One of the most heartwarming parts of the contest has been seeing families bake together. I have fond memories of baking with my children when they were little, and it’s wonderful to see your photos of kids helping measure, mix, and decorate. Baking together creates memories and teaches skills that last a lifetime.

The winner of last month’s challenge has been selected and will be announced here once they’ve given permission and I’ve contacted them.

Irish Apple Cake!

Irish Apple Cake is a recipe I return to every March, and often again in autumn when apples are at their peak. We’re not big on huge St. Patrick’s Day celebrations, but we always celebrate the day with a comforting meal — usually corned beef and cabbage and a slice of this cake for dessert. The cake is reliably satisfying: not overly sweet, with a texture that feels light but also substantial and comforting.

This cake’s crumb soaks up the optional custard sauce beautifully. The sauce is unbelievably simple to make and elevates each bite without overpowering the natural apple flavor. If you haven’t tried it yet, I encourage you to give the custard a try alongside the cake — it’s a small extra step that pays off in flavor and texture.

  1. Sign up for the Bake Club. If you’ve signed up before, there’s no need to register again — you’re already on the list. New sign-ups will receive a monthly email announcing the challenge and the prize. This is how I’ll contact the winner, so please be sure your name and email are entered correctly when you sign up.
  2. Bake the challenge recipe and share a photo. Make the Irish Apple Cake, take a clear photo of your finished bake, and post it to Instagram tagged #OfBatterAndDoughBakeClub. You can also upload your photo to the Of Batter and Dough Facebook page, or email it directly to [email protected]. Submitting your photo enters you in the prize drawing. Make sure to submit your photo before April 1st to qualify.
