I’ve been experimenting with lots of cake pop variations lately—almost 40 different styles as I work toward a book. With Thanksgiving coming up, here’s a simple way to avoid dry turkey and add a fun dessert to your table. Start with your favorite cake and frosting combination and follow the basic cake pop method for moist, flavorful cake pops. Then transform them into Turkey Pops using the components and tips below. For the turkey bodies, use a chocolate candy coating, almond bark, or candy melts, and use extra melted chocolate as “glue” to attach the decorations.
Turkey Feathers: Caramel Candy Corn
Caramel candy corn makes warm, autumnal feathers; you can also use the original candy corn for brighter, more colorful feathers.
Heads: Coated Espresso Beans
Use the brown coated espresso beans for small round heads. I found mine at The Fresh Market, but similar coated coffee beans are widely available.
Beaks: Orange Candy Chips
Small orange candy-coated chips work well for beaks. Look for rainbow or candy-coated chips in baking supply stores.
Wattle: Mini Heart Sprinkles
Tiny heart-shaped sprinkles make a cute wattle. If you can’t find the exact type, try similar small heart or teardrop sprinkles from cake-supply shops.
Legs: Pretzel Pieces
Use the “I” shaped pieces from alphabet pretzels, broken in half, to create little legs. These were available at World Market, but regular pretzel sticks or broken thin pretzels work just as well. Insert the legs while the coating is still soft so they adhere securely.
Eyes: Drawn or Edible Details
Small candy eyes are an option, or use an edible ink pen to draw pupils and small details directly on the coating for a neat finish.
Assembly tips: Dip each cake pop in your melted coating and allow any excess to drip off before setting. Attach the feathers, head, beak, wattle, legs, and eyes with a dab of melted coating. Hold pieces in place briefly or set the pop in a styrofoam block while the coating firms. For best results, work on a slightly cooled surface so decorations won’t slide.
