Whole 30 Challenge Menu For The Week

Meal planning matters when several dietary preferences share one kitchen. In our household we have a vegan eater, a paleo eater, and a picky eater, so weeknight dinners need to be flexible. Below is the Whole 30-friendly plan that worked for us this week, with simple swaps that kept everyone satisfied.

Tuesday – Taco night using lettuce wraps for the Whole 30-friendly option. My son enjoys traditional tortillas, so we prepare separate plates. Lettuce wraps took a little getting used to, but now I genuinely enjoy the crisp texture and lighter finish.

Wednesday – Baked chicken breasts topped with a crunchy, compliant coating for texture, served with green beans prepared for a crowd and some toasted bread only for the non-Whole 30 family members.
