You get the best of both worlds with these gluten-free, vegan brownie cookies — fudgy brownie flavor inside a chewy chocolate cookie. What could be better?
Brownies are one of my favorite go-to desserts: simple to prepare, baked in one pan, and irresistible warm, especially topped with a scoop of ice cream. It’s that chewy, fudgy texture that keeps me coming back.
I wanted to capture that brownie experience in a grab-and-go cookie. The challenge was to make them gluten-free, dairy-free and egg-free — and I also aimed for nut-free. The result exceeded my expectations.
These gluten-free vegan brownie cookies are a huge success. They bake up with crisp edges and a chewy, fudgy center, delivering rich chocolate flavor from dairy-free chocolate and cocoa powder. For me, this is the ideal cookie.
Fair warning: once you make these, they’re hard to stop eating. You’ll likely tell yourself “just one more.” They’re fantastic served with dairy-free coffee ice cream — a real game changer.

- 1 cup, plus 3 tablespoons Sarah’s gluten free flour blend
- 1/2 teaspoon baking powder
- 1/2 teaspoon sea salt
- 1/3 cup dairy-free chocolate chips, melted
- 1/4 cup grape seed or sunflower oil
- 1/2 cup quality cocoa powder
- 3/4 cup cane sugar
- 1/4 cup pure maple syrup
- 1/4 cup warm water
- 1 teaspoon pure vanilla extract
- Preheat the oven to 350°F (175°C). Line a large baking sheet with parchment paper.
- In a medium bowl, sift together the gluten-free flour blend, baking powder and salt. Set aside.
- Melt the dairy-free chocolate chips. In a large mixing bowl, combine the melted chocolate with the oil and cocoa powder, stirring until smooth.
- Stir the sugar, maple syrup, warm water and vanilla into the chocolate mixture. Add the flour mixture and mix until a cohesive dough forms.
- Use a cookie scoop or your hands to portion the dough onto the prepared baking sheet. Flatten each portion slightly with your fingers.
- Bake the cookies for 11–12 minutes, then cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
