Ingredients

  • 1/2 cup (4 ounces or 8 tablespoons) unsalted butter, softened
  • 2 ounces unsweetened baking chocolate, chopped
  • 1 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon espresso powder (optional)
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 teaspoon chili powder (optional)
  • 1/4 teaspoon table salt
  • 1/2 cup semisweet chocolate chips

Marshmallow Fluff Frosting

  • 3/4 cup marshmallow fluff
  • 1/2 cup (8 tablespoons or 4 ounces) unsalted butter, softened
  • 1/2 cup powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • Pinch of table salt

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch pan or line it with parchment paper. Set aside.
  2. In a large saucepan over low heat, melt the butter and chopped baking chocolate together. Remove from heat once smooth.
  3. Whisk in the granulated sugar, cocoa powder, the egg, and vanilla until combined.
  4. Switch to a rubber spatula and fold in the flour, baking powder, espresso powder (if using), cinnamon, chili powder, salt, and chocolate chips until just incorporated.
  5. Spread the batter evenly in the prepared pan. Bake 20–25 minutes, or until the center is set, the top is slightly cracked, and the edges pull away from the pan. Allow to cool completely before serving or frosting.
  6. For the marshmallow fluff frosting: In a large bowl, beat the marshmallow fluff and softened butter until smooth and fluffy, about 2–3 minutes. Scrape the bowl, then beat in the sifted powdered sugar, vanilla, and a pinch of salt until light and spreadable, another 2–3 minutes. Spread over cooled bars and grate a little chocolate on top if desired.
