These simple breakfast-brunch nachos are the perfect hangover cure. Layers of tortilla chips, cheese, spring onions and a homemade tomato salsa made with black beans, sweetcorn and pancetta or bacon create a satisfying, spicy bake. Add eggs for an optional breakfast twist.
Equipment
- Cast iron pan or ovenproof casserole dish
Ingredients
- 1 tbsp Olive oil
- 2 shallots (or 1 small onion), chopped
- 1 tsp garlic puree (or 2 cloves crushed)
- 130 g smoked pancetta or smoked bacon, chopped
- 330 g cherry tomatoes, quartered (or a tin of tomatoes)
- 400 g tin black beans, drained and rinsed
- 200 g tin sweetcorn
- 1 tbsp vinegar (balsamic or sherry works well)
- 2 tbsp fresh coriander, chopped
- 2 tbsp Frank’s RedHot sauce (adjust to taste)
- Salt and pepper, to taste
- 6 spring onions, sliced
- 200 g (8 oz) tortilla chips, lightly salted
- 150 g (1 cup) mozzarella, grated
- 150 g (1 cup) Red Leicester (or cheddar), grated
Optional breakfast addition
- 4 eggs
Instructions
- Preheat the oven to 200°C (fan 180°C / 400°F). Heat the olive oil in a pan over medium heat.
- Add the shallots, garlic and pancetta to the pan and cook until golden brown.
- Stir in the tomatoes and cook until softened. If using tinned tomatoes, you can continue to the next step as they are already soft.
- Add the sweetcorn, black beans and vinegar. Stir to combine.
- Finish the salsa by stirring in the chopped coriander and Frank’s RedHot sauce. Cook for 1–2 minutes, then season with salt and pepper.
- In an ovenproof casserole dish or cast iron pan, spread half the tortilla chips in an even layer.
- Top the chips with half the homemade salsa and half the sliced spring onions, then sprinkle with a handful of each cheese (mozzarella and Red Leicester).
- Repeat the layers with the remaining chips, salsa, spring onions and cheeses, reserving some spring onions for garnish.
- Bake in the preheated oven for 20 minutes.
- If adding eggs, remove the dish after 10 minutes, crack the eggs on top and return to the oven for the final 10 minutes until the eggs are set to your liking.
- Remove from the oven, sprinkle with the remaining spring onions, adjust seasoning if needed and serve immediately. Enjoy!

This homemade salsa is quick and easy. Start with shallots and garlic sautéed in olive oil—add pancetta for extra savoury depth if you like. Fresh cherry tomatoes give a chunky texture; canned tomatoes work if you prefer a looser salsa.



Finish the salsa with a tin each of black beans and sweetcorn, a splash of vinegar and Frank’s RedHot sauce to taste, then fold in a handful of chopped coriander.
Substitutes
